Mini Cheese Biscuits

Easy cheesy biscuits made with simple ingredients. A quick, kid-friendly baking recipe perfect for lunchboxes and baking with children.

Ingredients
  

  • 50 g Plain Flour
  • 50 g Spelt Flour or Wholemeal Flour Alternatively Use 100g Plain Flour or 100g Plain Wholemeal Flour
  • 50 g Butter
  • 180 g Mature Cheddar Cheese
  • 1 pinch salt
  • 1 pinch Paprika
  • 1-2 tbsp Cold Water

Equipment

  • 1 Stand Mixer optional
  • 1 Food Processor / Chopper optional

Method
 

  1. Preheat the oven to 180°C (160°C fan) and line a baking tray.
  2. Blitz the cheddar in a food processor until finely grated. Or finely grate by hand.
  3. Add the flours, butter, salt and paprika. Pulse in a stand mixer with paddle attachment until the mixture resembles breadcrumbs. Optional can use hands.
  4. Add 1–2 tablespoons of cold water and mix again until the dough comes together into a soft ball.
  5. Roll the dough out on a lightly floured surface to around 3mm thick or thickness of a coin
  6. Cut into shapes using small cookie cutters. Place on a lined baking tray.
  7. Bake for 10–15 minutes, until lightly golden.
  8. Cool on a rack or enjoy warm
