This month I’m keeping it simple with my meal plans, as we will be holidaying, camping and spending most of our time outdoors. So this month it’s all about picnic food, sharing platters, easy bakes and a few Summer crockpot slow cooker recipes. First off I have included my home meal plan and then I have also included our link to an easy holiday camping meal plan.
Tomato and Butternut Squash Spaghetti – slowly roast a Butternut squash with chopped onion, garlic, thyme and seasoning and then add or blitz the flesh with chopped tomatoes or passata adding in tomato puree and a 1/4 teaspoon of white sugar. Then cook spaghetti in vegetable stock and add it to the tomato mix. Serve with parmesan or sprinkled cheese.
