May Meal Plans

There is quite a difference between my Easter and April meal plans to my May one.  I have made the decision to join Slimming World to lose some weight.  So this month I want to be able to incorporate my diet into making family meals that we can all share together.  Then there are a few recipes that use up Easer chocolate in baking for the kids but then also a few healthier bakes thrown in, using vegetables and fruits.  I’m also starting to incorporate some alternative picnic meal ideas such as mini quiches and fruit muffins.  So for this month’s May meal plans we will be enjoying and trying out the following;

Courgette & Chicken Enchiladas

Sweet Potato Falafels

Chilli cheese Fries

Chicken, bacon, avocado salad with lemon vinaigrette.

Fish mornay Pasta Bake

Lentil and veggie nuggets

Tomato Pumpkin Spaghetti

Slimming World Recipe lasagne

Sausage and Butter Bean Casserole

Mini Crustless Quiches

Pizza roll ups

Sweet potato and Carrot Rostis

Katsu Chicken

Pizza Chicken

Beef Stroganoff Pasta

Lentil Dahl

Buddy, Petal and Jamie Oliver Self Raising Flour Pizzas

Diet Coke Ham, homemade wedges, fried eggs and peas

Snacks and desserts

Fruit Salad Ideas

Carrot, courgette and Apple Muffins
