January Meal Planning

With winter warmers firmly on our dinner table and lots of added veggies for a healthier  balance after Christmas, our January food so far has been yummy.  Each month I’m going to share with you, some of the meals that we will have eaten or plan to eat.  I will also endeavour to include a few snacks and desserts that we wish to eat as well.  My inspiration for meal planning comes from Pinterest, cookbooks and my own head.  I will also include a Pinterest board for that particular month and occasionally a recipe for some of the meals made.

Slow cooker corned beef Hash and peas

Delia Smith BBQ chicken with chips and salad

Cod and Chorizo Tomato Bake with butterbeans with roasted broccoli, kale and cauliflower

Mince and lentil spaghetti bolognaise with garlic bread

Tinned salmon, tuna and potato fishcakes

Sausage, potato and roasted vegetable traybake

Healthy Roasted Broccoli, Cauliflower, Kale and Quorn Chicken escalope with avocado and quinoa – This one was for us adults as the kids would not entertain this one!

Jacket potatoes with tuna, cheese and salad

Parmesan Crusted Fish, potato wedges and peas

Meatball and Mozzarella bake

Chickpea salad and chicken goujons

Crispy Southwest Wraps with nachos and salad

Burns night – Veggie haggis, mash, mashed turnip

Jelly and fruit

Peach, Pear and Apple oat crumble and custard

Strawberries, Blueberries, Spinach, Banana and yoghurt smoothies
