January Meal Planning

With winter warmers firmly on our January meal plan this week and lots of added veggies for a healthier balance after Christmas, our January food plan so far looks set to be yummy.  If you’re new to these posts welcome.  Each week  I plan in all our usual weekly meals that we tend to have, as we all have a list of day to day meals that we churn out, don’t we!  I then set myself a pinterest board of monthly meal plan ideas to jazz up several meals on our weekly meal plan.

So in short I pick a couple of recipes, snacks and bakes off the list below and add it to my weekly plan. I also endeavour to make the recipes seasonal for the UK.  My inspiration for meal planning comes from Pinterest, cookbooks and my own head.  I always include my Pinterest board for each month and occasionally a recipe for some of the meals I have made.

January Meal Plan

Slow cooker corned beef Hash and peas

Delia Smith BBQ chicken with chips and salad

Cod and chorizo Tomato Bake with butterbeans with roasted broccoli, kale and cauliflower

Mince and lentil spaghetti bolognaise with garlic bread

Tinned salmon, tuna and potato fishcakes served with pasta salad

Mary Berry sausage, potato and roasted vegetable traybake

Healthy roasted broccoli, cauliflower, kale and quorn chicken escalope with avocado and quinoa – This one was for us adults as the kids would not entertain this one!

Parmesan crusted Fish, potato wedges and peas

Meatball and mozzarella bake

Chickpea salad and chicken goujons

Crispy southwest wraps with nachos and salad

Burns night – Veggie haggis, mash, mashed turnip

Oven roasted orange chicken with fennel

Ultimate chicken tagine

Veggie quesadillas

Taco stuffed sweet potatoes

Chicken tartiflette

Chickpea salad

Cucumber, avocado and feta salad

One pan veggie lasagna

Lentil nuggets

Snacks and desserts

My fussy eater no bake peanut butter flapjack bars

Leftover Mincemeat Crumble

Blueberry oatmeal muffins

Healthy carrot cake bread

No bake cranberry and chocolate breakfast bars

Pan fried banana with yoghurt

Banana Cake- My own blog recipe

Egg and Banana pancakes

Healthy Chocolate Mint Mousse – My Fussy Eater

Jelly and fruit

Peach, Pear and Apple oat crumble and custard

Strawberries, Blueberries, Spinach, Banana and yoghurt smoothies

Vegan Pea Cookies
