What I love about this recipe is that I’m not having to use the measuring scales for a change. I invested in a set of cheap measuring cups from Aldi and this makes it a very speedy recipe. I also roughly measure the cold butter out in a 1/3 cup and then melt it.
2-3 Ripe Bananas
1/3 cup of melted butter
1 egg beaten
1 tsp vanilla essence
1/2 cup caster sugar
1 1/2 cups Self Raising Flour
1tsp baking powder
Drop of Milk
Good handful of dark chocolate chips.
Mix all the wet mixture together and then slowly add the flour and baking powder. Add in a drop of milk to the mixture. Lastly fold the chocolate chips into the mixture and pour into a loaf tin and then bake for 30-35 minutes at 160 degrees or gas mark 3 and test until a skewer comes out clean from the middle. Remove from the oven and cool in a tin on a rack and then turn out and slice to serve.
