Sweet Puff Pastry Recipe – Heart shaped Palmiers

I love cooking and baking for celebrations around the year, any excuse to bring more fun to the table and I’m there!  So with Valentine’s Day in a weeks time, I have been practicing making some easy sweet puff pastry recipes to dish out to all the family.  They are that easy I have baked a batch for our Scout group for their camp weekend.

I will start off by saying that as a busy Mum of 4, I don’t have the time or the inclination to make my own pastry.  I have also made a few different types of sweet puff pastry recipe hearts and these so far are our favourite.  They also happen to be the easiest so that is a win for limiting my time in the kitchen.  One thing I should state is that you need a little bit of time to finish a batch as they do need some chilling time in the preparation of the pastry palmier hearts but you can go away and leave them to do their thing before baking, meaning you can get some Jobs done or chill out whilst they’re chilling!

Sweet Puff Pastry Recipe for Heart shaped Palmiers

Preparation – 60 mins

Cook Time 18-20 Minutes

Ingredients

I Puff Pastry Sheet ready per packet instructions

At least 5 Tbsp of Raspberry Jam

Optional Icing Sugar for dusting

Instructions

  1. Roll out the pastry sheet leaving it sitting on the parchment paper.
  2. Evenly cover the pastry sheet with a layer of jam.
  3. Fold the long sides of the pastry sheet halfway into the middle.
  4. Fold them again so the two folds meet in the middle.
  5. Fold one side on top of the other.
  6. Chill in the refrigerator for at least 40 minutes, the longer the better as it makes for easier cutting if the pastry has been chilled and left to slightly harden.
  7. 10 minutes before you take the pastry out of the oven preheat the oven to 180 fan oven 350 f.
  8. Slice the dough into 20 slices.
  9. Bake on the parchment paper on an oven tray for 18-20 minutes. 15 minutes for fast ovens.
  10. The hearts are done the they’re golden and will set more as they cool.
  11. Leave for 5 minutes on the baking tray before transferring to a cooling rack
  12. Dust with icing sugar (optional)
  13. Best eaten quite quickly but can be kept in an airtight container for a few days.

Additional Information

You can make different flavour sweet puff pastry recipe hearts filled with other flavours such as chocolate spread, other fruit jams, lemon curd or cinnamon sugar hearts.

I find shaping the cut slices a little, makes for better hearts. When raw they look a little rustic in shape, don’t be put off as once cooked they spread into a good heart shape.

  • 1 tsp Icing sugar

Method
 

  1. Roll out the pastry sheet leaving it on the parchemnt paper supplied.
  2. Evenly cover the pastry sheet with the jam.
  3. Fold the long sides of the pastry sheet halfway into the middle.
    Fold them again so the two folds meet in the middle.
    Then fold one side over the other and roll up the parchment paper around it like a sausage.
  4. Chill in the fridge for at least 40 minutes to harden.
  5. Slice the dough into 20 slices and place on the same parchement sheet in a baking tray
  6. Bake in a preheated oven at 180 fan oven or 350 f for 18 – 20 minutes until golden.
  7. Leave to cool on the tray and then transfer onto a wire rack
  8. Dust with icing sugar and enjoy!
